| Our varietal olives are grown in the hot interior valleys of California from trees that descend from cuttings brought by the Spanish missionaries hundreds of years ago. The lush fruit is harvested in the Fall then slowly cured with salt instead of lye to produce an all-natural product. The wonderful flavor of these large olives is further enhanced with our unique spicing combinations. We handpack them in a special brine that includes Champagne vinegar, an ounce of extra virgin olive oil, slices of citrus and fresh herbs. Varieties include: Sun-Dried Mission Olives, Olive Melange with Bay Leaf & Garlic, "Greek Style" Manzanillo with Lemon Slices & Fresh Thymeand "Sicilian Style" Sevillano with Orange Slices & Fennel Seeds. |
